Vanilla and roasted almond milk

  • ½ a vanilla bean or 1 teaspoon vanilla extract
  • 4 cups of milk
  • 1 cup of 15% cream
  • ¾ cup of blanched almonds, well roasted and coarsely chopped
  • ½ cup of sugar



  1. Split the half of the vanilla bean down its length using the tip of a paring knife. Scrape out the seeds.
  2. In a pan bring the milk, heavy cream, almonds, sugar, vanilla seeds and bean to a boil. Turn down the heat and simmer for 10 minutes. Strain through a sieve. If you use vanilla extract instead of the vanilla bean, add it now.
