{"id":41184,"date":"2021-08-27T10:25:02","date_gmt":"2021-08-27T14:25:02","guid":{"rendered":"https:\/\/www.stromspa.com\/magazine\/uncategorized\/tarte-a-la-courge-et-cardamome\/"},"modified":"2022-01-24T14:41:46","modified_gmt":"2022-01-24T19:41:46","slug":"winter-squash-and-cardamom-pie","status":"publish","type":"post","link":"https:\/\/www.stromspa.com\/en\/magazine\/gourmet-discoveries\/winter-squash-and-cardamom-pie\/","title":{"rendered":"Winter Squash and Cardamom Pie"},"content":{"rendered":"<h3>NUTS AND BUTTER-MAPLE CARAMEL | CHANTILLY COFFEE CREAM<\/h3>\n<h3><strong><span style=\"color: #a37158;\">INGReDIENTS<\/span><\/strong><\/h3>\n<p><strong>Sweet dough<\/strong><\/p>\n<ul>\n<li>2 cups of flour<\/li>\n<li>\u00be cup of powdered sugar<\/li>\n<li>\u00bc cup of almond powder<\/li>\n<li>\u00bd cup + 2 tbsp. of cold butter, cubed<\/li>\n<li>1 egg (large)<\/li>\n<li>1 orange (zest only)<\/li>\n<\/ul>\n<p><strong>Winter Squash and Cardamom Filling<\/strong><\/p>\n<ul>\n<li>2 medium butternut squashes (2 cups of pur\u00e9e)<\/li>\n<li>4 shredded cardamom pods or 1 tsp. of ground cardamom<\/li>\n<li>\u00bd cup of packed brown sugar<\/li>\n<li>\u00bd cup of milk<\/li>\n<li>2 eggs<\/li>\n<\/ul>\n<p><strong>Nuts and Butter-Maple Caramel<\/strong><\/p>\n<ul>\n<li>1 cup of pecans<\/li>\n<li>1 cup of walnuts<\/li>\n<li>1 cup of slivered almonds<\/li>\n<li>2 cups of sugar<\/li>\n<li>2\/3 cup of R\u00e9duit de L\u00e9o or Coureur des Bois whisky<\/li>\n<li>1 cup of 35% cream<\/li>\n<li>\u00bc cup of butter<\/li>\n<li>1 tsp. of fleur de sel<\/li>\n<\/ul>\n<p><strong>Chantilly Coffee Cream<\/strong><\/p>\n<ul>\n<li>2 cups of 35% cream<\/li>\n<li>\u00bd cup of sugar<\/li>\n<li>1 cup of arabica coffee beans (preferably organic and fair trade)<\/li>\n<li>2 short espressos<\/li>\n<li>3 gelatin sheets (optional)<\/li>\n<\/ul>\n<h3><strong><span style=\"color: #a37158;\">Directions<\/span><\/strong><\/h3>\n<p><strong>Sweet dough<\/strong><\/p>\n<ol>\n<li>In a food processor, mix the flour, powdered sugar and almond powder.<\/li>\n<li>Add the butter and mix. Then add the egg and orange zest and mix until the mixture forms a ball.<\/li>\n<li>Knead the ball by hand so that the dough has an even consistency.<\/li>\n<li>Roll the dough uniformly to a thickness of 2\u20133 mm. Line a 9-inch fluted pie pan and remove excess dough from the rim.<\/li>\n<li>Prick the dough with a fork and set aside.<\/li>\n<\/ol>\n<p><strong>Winter Squash and Cardamom Filling<\/strong><\/p>\n<ol>\n<li>Preheat the oven to 375 \u00b0F.<\/li>\n<li>Cut the butternut squashes in half lengthwise and remove the seeds. Place them on a tray lined with parchment paper, cut side down.<\/li>\n<li>Roast the squash in the oven for 20 to 25 minutes or until the flesh separates from the skin.<\/li>\n<li>Decrease the oven temperature to 325 \u00b0F.<\/li>\n<li>Remove the flesh of the squash with a spoon.<\/li>\n<li>In a food processor, blend the flesh of the squash until it becomes a smooth pur\u00e9e. Set aside 2 cups of squash pur\u00e9e.<\/li>\n<li>Using a hand mixer, combine the milk, brown sugar and eggs. Add the set-aside pur\u00e9e and mix.<\/li>\n<li>Pour the squash mixture into the pie shell and bake (325 \u00b0F) for 20 to 25 minutes (the pie is done when the crust is browned and the mixture hardens uniformly).<\/li>\n<li>Let cool and refrigerate.<\/li>\n<\/ol>\n<p><strong>Nuts and Butter-Maple Caramel<\/strong><\/p>\n<ol>\n<li>In a saucepan, caramelize the sugar and the R\u00e9duit de L\u00e9o until the mixture turns a coppery colour.<\/li>\n<li>Remove from heat and add the cream and butter to the mixture. Return to heat and bring to a boil. Set aside.<\/li>\n<li>In a skillet, dry roast the almonds. Add the maple caramel by thoroughly coating the nuts. Set aside the mixture of nuts and caramel.<\/li>\n<\/ol>\n<p><strong>Chantilly Coffee Cream<\/strong><\/p>\n<ol>\n<li>In a saucepan, dry roast the coffee beans for 1 minute. Deglaze with the cream, then add the sugar and 2 short espressos. Bring to a boil. Remove from heat, cover and let infuse for 30 minutes.<\/li>\n<li>Rehydrate the gelatin sheets in cold water.<\/li>\n<li>Pass the cream and coffee mixture through a fine sieve, then bring back to a boil. Wring out the gelatin sheets and melt them in the boiling coffee cream.<\/li>\n<li>Put the cream and coffee mixture in a container and refrigerate for 2 to 3 hours.<\/li>\n<li>Using an electric mixer or whisk, whip the cold cream until soft peaks form.<\/li>\n<\/ol>\n<h3><strong><span style=\"color: #a37158;\">ASSEMBLY<\/span><\/strong><\/h3>\n<p>Remove the pie from the refrigerator and let it sit for 10 minutes. Put the mixture of nuts and caramel onto the winter squash pie so that the top is completely covered.
