{"id":34600,"date":"2020-05-27T16:31:52","date_gmt":"2020-05-27T20:31:52","guid":{"rendered":"https:\/\/www.stromspa.com\/magazine\/uncategorized\/focaccia-maison-aux-herbes-tomates-confites-et-pesto-de-pissenlit\/"},"modified":"2020-05-28T09:21:58","modified_gmt":"2020-05-28T13:21:58","slug":"homemade-focaccia-with-herbs-candied-tomatoes-and-dandelion-pesto","status":"publish","type":"post","link":"https:\/\/www.stromspa.com\/en\/magazine\/gourmet-discoveries\/homemade-focaccia-with-herbs-candied-tomatoes-and-dandelion-pesto\/","title":{"rendered":"Homemade focaccia with herbs, candied tomatoes and dandelion pesto"},"content":{"rendered":"<p>Since the beginning of lockdown, there has been a sudden craze for making bread at home.<\/p>\n<p>That&#8217;s why Rapha\u00ebl Podlasiewicz, the executive chef of Nord restaurants and Fika caf\u00e9 at Str\u00f8m Nordic Spa, offers you his delicious recipe for focaccia with herbs, a flat bread of Italian origin which you can easily make at home and which will go perfectly with your cocktail during your aperitif.<\/p>\n<p>Preparation time: 40 minutes |\u00a0Rest time: 16-24 hours |\u00a0Cooking time: 20-25 minutes<\/p>\n<p>Makes: 1 focaccia of 25 centimeters (10 inches) in diameter<\/p>\n<h3><a href=\"https:\/\/youtu.be\/baoTUazFKEc\" target=\"_blank\" rel=\"noopener noreferrer\">SEE THE VIDEO<\/a><\/h3>\n<h2>Ingredients<\/h2>\n<h3>Homemade focaccia with herbs<\/h3>\n<ul>\n<li>1 teaspoon dried yeast<\/li>\n<li>1 cup warm water<\/li>\n<li>325 g (2 \u00bd cups) Italian 00 flour<\/li>\n<li>6 sprigs fresh thyme, leaves removed<\/li>\n<li>2 sprigs fresh rosemary, leaves removed<\/li>\n<li>3 cloves black garlic<\/li>\n<li>4 tablespoons olive oil<\/li>\n<li>\u00bd teaspoon fleur de sel<\/li>\n<li>10 to 12 cherry tomatoes<\/li>\n<\/ul>\n<h3>Dandelion pesto<\/h3>\n<ul>\n<li>2 cups dandelion leaves, well washed and wrung out<\/li>\n<li>2 cups fresh basil leaves<\/li>\n<li>\u00bd cup olive oil<\/li>\n<li>\u00bc cup roasted almonds<\/li>\n<li>1 lemon, squeezed juice and grated zest<\/li>\n<li>2 tablespoons honey<\/li>\n<li>Salt and pepper, to taste<\/li>\n<\/ul>\n<h3>Finishing<\/h3>\n<ul>\n<li>Parmigiano-Reggiano cheese, to taste (optional)<\/li>\n<li>1 teaspoon of honey<\/li>\n<\/ul>\n<h2>Preparation<\/h2>\n<h3>Homemade focaccia with herbs<\/h3>\n<ol>\n<li>In the bowl of a stand mixer, dissolve the dry yeast in warm water and let stand for 10 minutes. Gradually stir in the Italian flour when the dry yeast is activated.<\/li>\n<li>Using the kneading hook, stir lightly until the dough begins to form.<\/li>\n<li>Transfer the dough to a lightly oiled bowl and cover with plastic wrap.<\/li>\n<li>Let the dough rise on the counter between 16 and 24 hours at room temperature.<\/li>\n<li>Place the rack in the middle of the oven. Preheat the oven to 230\u00b0C (450\u00b0F).<\/li>\n<li>Transfer the dough to a lightly oiled work surface, stretch the dough slightly and fold each side toward the center, then repeat the operation 5 to 6 times.<\/li>\n<li>Line a 25-cm (10-inch) diameter springform pan with parchment paper.<\/li>\n<li>Place the dough in the pan, level by pressing lightly with fingers, then sprinkle with thyme and rosemary.<\/li>\n<li>In a bowl, using a fork, mash the black garlic cloves. Pour in the olive oil and mix.<\/li>\n<li>Spread the cherry tomatoes over the dough, brush the focaccia with the olive oil and black garlic mixture, then sprinkle with fleur de sel.<\/li>\n<li>Cook the focaccia for 20 to 25 minutes or until golden brown.<\/li>\n<\/ol>\n<h3>Dandelion pesto<\/h3>\n<ol>\n<li>In a food processor, combine all ingredients, then grind until smooth.<\/li>\n<li>Season with salt and pepper.<\/li>\n<\/ol>\n<h3>Finishing<\/h3>\n<ol>\n<li>Remove from the oven and spread 3 to 4 tablespoons of dandelion pesto on top of the focaccia.<\/li>\n<li>Using a Microplane grater, grate the Parmigiano-Reggiano cheese, sprinkle generously over the focaccia and drizzle with honey.<\/li>\n<li>Cut the focaccia according to the number of guests.
