In the 19<sup>th<\/sup>\u00a0century it was considered to be a complete breakfast for the Danish people. For Rapha\u00ebl Podlasiewicz, executive chef of Str\u00f8m\u2019s Nord restaurants and Fika caf\u00e9, the sm\u00f8rrebr\u00f8d is a blank canvas. Salty or sweet and perfect as an appetizer, this toast can be recreated according to inspiration and with seasonal ingredients. To add a touch of freshness to this Scandinavian classic, we played with different textures by layering the crunchy salad seasoned with aromas of the boreal forest on top of Nordic shrimp.<\/p>\n<h3><a href=\"https:\/\/youtu.be\/raNlg_p51cA\" target=\"_blank\" rel=\"noopener noreferrer\">SEE VIDEO<\/a><\/h3>\n<p style=\"text-align: center;\">Preparation time: 20 minutes |\u00a0Servings: 2 open-faced sandwiches [sm\u00f8rrebr\u00f8ds]<\/p>\n<h3 style=\"text-align: left;\">Ingredients<\/h3>\n<p style=\"text-align: left;\"><strong>&#8211; 2 slices of Nordic bread <\/strong>(can be replaced by rye or pumpernickel bread)<\/p>\n<p style=\"text-align: left;\"><strong>&#8211; 1 \u00bd cup Nordic shrimp remoulade <\/strong>(see recipe below)<\/p>\n<ul style=\"text-align: left;\">\n<li>\u00bd teaspoon caraway seeds<\/li>\n<li>1 teaspoon coriander seeds<\/li>\n<li>6 dried juniper berries<\/li>\n<li>2 tablespoons plain yogurt<\/li>\n<li>1 tablespoon mayonnaise<\/li>\n<li>1 tablespoon lime juice<\/li>\n<li>2 tablespoons chopped fresh coriander<\/li>\n<li>1 tablespoon chopped fresh dill<\/li>\n<li>1 \u00bd cup of cooked and peeled Nordic shrimp<\/li>\n<li>Salt and pepper to taste<\/li>\n<\/ul>\n<p style=\"text-align: left;\"><strong>&#8211; \u00bd cup <\/strong><strong>kohlrabi<\/strong><strong>,<\/strong><strong> fennel and cucumber salad<\/strong> (see recipe below)<\/p>\n<ul style=\"text-align: left;\">\n<li>1 shallot, finely chopped<\/li>\n<li>1 teaspoon honey<\/li>\n<li>1 teaspoon mustard seeds<\/li>\n<li>1 tablespoon white wine vinegar<\/li>\n<li>2 tablespoons olive oil<\/li>\n<li>1 small kohlrabi, peeled and thinly sliced<\/li>\n<li>\u00bd thinly sliced fennel<\/li>\n<li>1 Libanese cucumber, thinly sliced<\/li>\n<li>Salt and pepper to taste<\/li>\n<\/ul>\n<p style=\"text-align: left;\"><strong>&#8211; \u00bc cup sea buckthorn berries<\/strong><\/p>\n<p style=\"text-align: left;\"><strong>&#8211; Microgreens of your choice<\/strong> (lamb&#8217;s lettuce, sunflower, alfalfa, radish, etc.)<\/p>\n<h3 style=\"text-align: left;\">Preparation<\/h3>\n<p style=\"text-align: left;\"><strong>Step 1 \u2013 Making the Nordic shrimp remoulade<\/strong><\/p>\n<ol style=\"text-align: left;\">\n<li>In a skillet over high heat, dry roast the caraway seeds, coriander seeds and juniper berries for 1 minute. Set the mixture aside and allow to cool.<\/li>\n<li>Using a mortar or a spice grinder, grind the spice mixture and set aside.<\/li>\n<li>In another bowl, mix plain yogurt, mayonnaise, lime juice, fresh herbs and spice mixture.<\/li>\n<li>Add the Nordic shrimp and season to taste. Refrigerate.<\/li>\n<\/ol>\n<p style=\"text-align: left;\"><strong>Step 2 \u2013 Assembling the <\/strong><strong>kohlrabi<\/strong><strong>, fennel <\/strong><strong>and cucumber salad<\/strong><\/p>\n<ol style=\"text-align: left;\">\n<li>In a bowl, combine shallot, honey, mustard, white wine vinegar and olive oil. Season to taste.<\/li>\n<li>Add the kohlrabi, fennel and cucumber. Mix well and let the preparation rest in the refrigerator for about 20 minutes to maximize the flavours.<\/li>\n<\/ol>\n<p style=\"text-align: left;\"><strong>Step 3 \u2013 Making the sm\u00f8rrebr\u00f8ds <\/strong><\/p>\n<ol>\n<li style=\"text-align: left;\">Toast two slices of Nordic bread until golden brown and crispy.<\/li>\n<li style=\"text-align: left;\">Garnish the bread slices with the shrimp remoulade. Randomly add the sea buckthorn berries so that you can find them in every bite.
