It blends beautifully with gin and vermouth, for a simply perfect match. In this recipe, Rapha\u00ebl uses Km12 gin and green vermouth, a honey vermouth from the Desrochers bee farm. While melon and kaffir lime bring freshness, legume water gives the cocktail its finesse and silky texture. To be enjoyed all summer long!<\/p>\n<h2><strong>Ingredients<br \/>\n&#8211; 1 serving<br \/>\n<\/strong><\/h2>\n<p>2 oz of cantaloupe or honeydew melon pur\u00e9e (see adjacent recipe)<br \/>\n1 oz of honey and kaffir lime syrup (see adjacent recipe)<br \/>\n1.5 oz of Km12 gin<br \/>\n1 oz lime juice<br \/>\n1 oz of Desrochers green vermouth<br \/>\n\u00bd oz of legume water or 1 egg white<br \/>\nFrozen melon cubes<br \/>\n1 sprig of rosemary<\/p>\n<p><strong>Honey and kaffir lime syrup<br \/>\n<\/strong>250 ml honey<br \/>\n125 ml water<br \/>\n2 kaffir lime leaves (or the zest of 2 limes)<\/p>\n<h2><strong>Preparation<\/strong><\/h2>\n<p><strong>Melon pur\u00e9e<br \/>\n<\/strong>Peel and seed a cantaloupe or honeydew melon. Cut the melon into cubes and pur\u00e9e in a food processor or with a hand blender.
