{"id":30145,"date":"2019-01-03T00:00:00","date_gmt":"2019-01-03T05:00:00","guid":{"rendered":"https:\/\/www.stromspa.com\/magazine\/uncategorized\/chakchouka-with-root-vegetables-and-smoked-tofu\/"},"modified":"2019-01-03T00:00:00","modified_gmt":"2019-01-03T05:00:00","slug":"chakchouka-with-root-vegetables-and-smoked-tofu","status":"publish","type":"post","link":"https:\/\/www.stromspa.com\/en\/magazine\/gourmet-discoveries\/chakchouka-with-root-vegetables-and-smoked-tofu\/","title":{"rendered":"Chakchouka with root vegetables and smoked tofu"},"content":{"rendered":"<p><em>On the occasion of the winter season, Str\u00f8m suggests a comforting recipe inspired by the Maghreb.<\/em><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>2 parsnips<\/p>\n<p>4 carrots from Nantes<\/p>\n<p>\u00bd buttercup squash<\/p>\n<p>2 cups Savoy cabbage, chopped coarsely<\/p>\n<p>8 Italian tomatoes<\/p>\n<p>2 red bell peppers<\/p>\n<p>2 onions, peeled and diced<\/p>\n<p>3 garlic cloves, minced<\/p>\n<p>1 Thai chili pepper, seeded and minced<\/p>\n<p>1 tablespoon olive oil<\/p>\n<p>\u00bd cup vegetable stock<\/p>\n<p>1 tablespoon paprika<\/p>\n<p>\u00bd tablespoon ground cumin<\/p>\n<p>1 cup smoked tofu, diced<\/p>\n<p>2 to 4 eggs<\/p>\n<p>\u00bd cup fresh herbs of your choice, chopped<\/p>\n<p>2 slices of sourdough bread<\/p>\n<p><strong>Preparation<\/strong><\/p>\n<ul>\n<li>Preheat the oven to 450\u00a0\u00b0F. Bake the lightly oiled bell peppers on a baking sheet in the oven until they begin to blacken. Reduce the temperature to 325\u00a0\u00b0F.<\/li>\n<li>Let the bell peppers cool down. Peel and seed them and cut them into large cubes.<\/li>\n<li>Remove the stalks from the tomatoes and make a cross cut on the top of each tomato.<\/li>\n<li>Poach the tomatoes in boiling salt water for 30 seconds, then place them in a bowl of ice water. Peel the tomatoes and cut them into coarse chunks.<\/li>\n<li>Peel and dice the root vegetables (parsnip, carrots, squash) and cut them into large cubes.<\/li>\n<li>Brown the root vegetables in olive oil in a large frying pan or cast-iron pan, add the onions, garlic, Thai chilli pepper, paprika and cumin.<\/li>\n<li>Deglaze with the vegetable stock, add bell peppers, tomatoes, cabbage and smoked tofu. Season with salt and pepper, Cover.<\/li>\n<li>Bake in the oven at 325\u00a0\u00b0F for 30 minutes, checking every 10 minutes until much of the liquid has evaporated.
